As a child in the early 1950's, Fidencio S. Longoria, "Fred" use to shine shoes in his home town of Gonzales, TX for .05 cents a pair. With the money he would earn, he would go to his favorite local store, Espinoza's Foods to order a coke, chips and two sausage links for .25 cents. Years later, Fred tried making his own sausage, having almost the exact recipe used today in 1975. With the help from his two sons, the recipe for the sausage would be complete in 1990 by using the perfect blend of brisket. The family restaurant opened in 1995. This was a dream come true for Fred and his wife, Angie, who named the restaurant. The Longoria family offers a menu of signature smoked items that span beyond the traditional brisket and ribs, including smoked sausage, hamburgers and beef jerky, all made of brisket. Longoria's BBQ has been recognized most for its house-made brisket sausage, a popular choice for first-timers and veterans!
